Ingredients
  

Fries
  • 4 cups Frozen French fries Or homemade fries
Toppings
  • 2 cups Cheese curds Fresh white cheddar
  • 1 cup Breakfast sausage Cooked and crumbled
  • 4 large Eggs Poached
Hollandaise Sauce
  • 3 large Egg yolks At room temperature
  • 1 tablespoon Lemon juice Freshly squeezed
  • 1 cup Unsalted butter Melted
  • 1 pinch Salt
  • 1 pinch Cayenne pepper Optional

Method
 

Prepare the Fries
  1. Preheat the oven and cook the frozen fries according to package instructions until crispy.
Make the Hollandaise Sauce
  1. In a saucepan, whisk together egg yolks and lemon juice until thickened.
  2. Slowly drizzle in melted butter while whisking continuously until the sauce is smooth and creamy.
  3. Season with salt and cayenne pepper to taste.
Cook the Sausage and Eggs
  1. In a frying pan, cook the breakfast sausage until browned and crumbled.
  2. Poach the eggs in simmering water until the whites are set but yolks are still runny.
Assemble the Poutine
  1. On a serving plate, layer the crispy fries, followed by cheese curds and crumbled sausage.
  2. Top with poached eggs and drizzle with hollandaise sauce.
