Ingredients
  

Fries
  • 4 large Russet potatoes peeled and cut into fries
  • 4 cups Vegetable oil for frying
  • 1 teaspoon Salt for seasoning
Toppings
  • 8 slices Bacon cooked and crumbled
  • 4 large Eggs poached
  • 1 cup Cheese curds fresh
Hollandaise Sauce
  • 3 large Egg yolks
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 cup Unsalted butter melted
  • 1 pinch Cayenne pepper optional
  • 1 pinch Salt

Method
 

Prepare the Fries
  1. Preheat the oven to 425°F (220°C). Spread the cut fries on a baking sheet and toss with salt.
  2. Bake the fries in the oven for 25-30 minutes until golden and crispy, turning halfway through.
Cook the Toppings
  1. In a frying pan, cook the bacon until crispy. Remove and crumble.
  2. Poach the eggs in simmering water for about 3-4 minutes until the whites are set but yolks are still runny.
Make the Hollandaise Sauce
  1. In a saucepan, whisk together egg yolks and lemon juice over low heat until thickened.
  2. Gradually whisk in melted butter until the sauce is smooth and creamy. Season with cayenne and salt.
Assemble the Poutine
  1. On a plate, layer the crispy fries, followed by cheese curds, crumbled bacon, and poached eggs.
  2. Drizzle generously with hollandaise sauce and serve immediately.

Notes
