Ingredients
  

Fries
  • 4 medium Russet potatoes peeled and cut into fries
  • 4 cups Vegetable oil for frying
  • 1 teaspoon Salt for seasoning
Toppings
  • 8 slices Bacon cooked and crumbled
  • 4 large Eggs poached
  • 1 cup Cheese curds fresh
Hollandaise Sauce
  • 3 large Egg yolks
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 cup Unsalted butter melted
  • 1 pinch Cayenne pepper optional
  • 1 pinch Salt

Method
 

Prepare the Fries
  1. Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).
  2. Fry the cut potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.
  3. Remove fries and drain on paper towels. Season with salt immediately.
Make the Hollandaise Sauce
  1. In a saucepan, whisk together the egg yolks and lemon juice over low heat until the mixture thickens.
  2. Slowly drizzle in the melted butter while continuously whisking until the sauce is thick and creamy.
  3. Season with cayenne pepper and salt to taste. Keep warm.
Assemble the Poutine
  1. Place a generous portion of fries on each plate.
  2. Top with crumbled bacon, poached eggs, and cheese curds.
  3. Drizzle with hollandaise sauce and serve immediately.
