Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 8 oz Boursin cheese Garlic & Herb flavor
  • 1 cup panko breadcrumbs
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh thyme chopped
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

Prepare the Chicken
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the Boursin cheese, parsley, thyme, salt, and pepper.
  3. Using a knife, create a pocket in each chicken breast and fill it with the Boursin mixture.
Coat and Bake
  1. In another bowl, mix the panko breadcrumbs with olive oil until evenly coated.
  2. Press the breadcrumb mixture onto the outside of each stuffed chicken breast.
  3. Place the chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
Serve
  1. Remove from the oven and let rest for 5 minutes before slicing.
  2. Serve warm with your choice of sides.
