Prepare the Chicken
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the Boursin cheese, parsley, thyme, salt, and pepper.
- Using a knife, create a pocket in each chicken breast and fill it with the Boursin mixture.
Coat and Bake
- In another bowl, mix the panko breadcrumbs with olive oil until evenly coated.
- Press the breadcrumb mixture onto the outside of each stuffed chicken breast.
- Place the chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
Serve
- Remove from the oven and let rest for 5 minutes before slicing.
- Serve warm with your choice of sides.
