Ingredients
  

Meatballs
  • 1 lb ground beef or ground pork
  • 1 cup panko breadcrumbs
  • 1 large egg
  • 2 tbsp soy sauce low sodium preferred
  • 2 tbsp gochujang Korean chili paste
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tbsp green onion chopped
  • 1 tbsp sesame seeds for garnish
Spicy Mayo Dip
  • 1 cup mayonnaise
  • 2 tbsp gochujang Korean chili paste
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp sriracha optional for extra heat

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, panko breadcrumbs, egg, soy sauce, gochujang, sesame oil, minced garlic, grated ginger, and chopped green onion.
  3. Mix until well combined, then form into 1-inch meatballs and place them on the prepared baking sheet.
Bake the Meatballs
  1. Bake the meatballs in the preheated oven for 15-20 minutes, or until cooked through and browned on the outside.
  2. Remove from the oven and sprinkle with sesame seeds before serving.
Make the Spicy Mayo Dip
  1. In a small bowl, mix together mayonnaise, gochujang, lime juice, and sriracha (if using) until smooth.
Serve
  1. Serve the meatballs warm with the spicy mayo dip on the side for dipping.
