Ingredients
  

Gammon
  • 1 kg Gammon joint Bone-in or boneless
Glaze
  • 100 g Honey Preferably runny
  • 50 g Brown sugar Light or dark
  • 2 tbsp Dijon mustard
  • 1 tbsp Apple cider vinegar
  • 1 tsp Ground cloves
  • 1 tsp Ground cinnamon
For boiling
  • 1 litre Water
  • 1 tbsp Black peppercorns
  • 2 leaves Bay leaves
  • 1 stick Cinnamon stick

Method
 

Prepare the Gammon
  1. Place the gammon joint in a large pot and cover it with water. Add the peppercorns, bay leaves, and cinnamon stick. Bring to a boil, then reduce to a simmer and cook for 1.5 hours.
Make the Glaze
  1. In a bowl, mix together honey, brown sugar, Dijon mustard, apple cider vinegar, ground cloves, and ground cinnamon until well combined.
Roast the Gammon
  1. Preheat the oven to 200°C (390°F). Once the gammon is cooked, remove it from the pot and let it cool slightly. Score the surface in a diamond pattern.
  2. Place the gammon in a roasting pan and brush generously with the honey glaze. Cover loosely with aluminum foil.
  3. Roast in the preheated oven for 30 minutes, basting with the glaze every 10 minutes. Remove the foil for the last 10 minutes to caramelize the glaze.
Serve
  1. Once cooked, remove from the oven and let rest for 10 minutes before slicing. Serve warm.

Notes

For extra flavor, you can add additional spices to the boiling water or use a different type of vinegar in the glaze.
