Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Sauce
  • 1 cup sweet and sour sauce
  • 1 cup pineapple chunks canned or fresh
  • 1 tablespoon soy sauce low sodium preferred
  • 1 tablespoon brown sugar packed
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
Garnish
  • 2 tablespoons green onions chopped
  • 1 tablespoon sesame seeds optional

Method
 

Prepare the Chicken
  1. Place the chicken breasts in the bottom of the crockpot.
Make the Sauce
  1. In a bowl, mix together the sweet and sour sauce, pineapple chunks, soy sauce, brown sugar, garlic powder, and ginger powder.
Combine and Cook
  1. Pour the sauce mixture over the chicken in the crockpot.
  2. Cover and cook on low for 4 hours or until the chicken is cooked through and tender.
Serve
  1. Once cooked, shred the chicken with two forks and mix it with the sauce.
  2. Serve over rice and garnish with chopped green onions and sesame seeds if desired.
