Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Filling
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons sweet and spicy pepper jelly store-bought or homemade
  • 1 pinch salt
  • 1 pinch black pepper
Garnish
  • 1 tablespoon chopped fresh chives for topping

Method
 

Prepare the Eggs
  1. Place the eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10 minutes.
  2. After 10 minutes, transfer the eggs to an ice bath to cool for 5 minutes.
  3. Peel the cooled eggs and slice them in half lengthwise.
Make the Filling
  1. In a mixing bowl, combine the egg yolks, mayonnaise, Dijon mustard, pepper jelly, salt, and black pepper. Mash until smooth.
  2. Transfer the mixture to a pastry bag or use a spoon to fill the egg white halves with the yolk mixture.
Garnish and Serve
  1. Sprinkle the filled eggs with chopped chives for garnish.
  2. Serve immediately or refrigerate until ready to serve.

Notes
