Make the Cruller Dough
- In a saucepan, combine water and butter. Bring to a boil over medium heat.
- Once boiling, remove from heat and stir in flour, sugar, and salt until a smooth dough forms.
- Allow the dough to cool slightly, then add eggs one at a time, mixing well after each addition.
Fry the Crullers
- Heat oil in a deep fryer to 350°F (175°C).
- Transfer the dough to a piping bag fitted with a large star tip.
- Pipe 4-inch rings onto parchment paper, then carefully drop them into the hot oil.
- Fry until golden brown, about 3-4 minutes per side. Remove and drain on a cooling rack.
Prepare the Strawberry Glaze
- In a bowl, whisk together powdered sugar, milk, pureed strawberries, and vanilla extract until smooth.
- Adjust the consistency with more milk if necessary.
Glaze the Crullers
- Dip the top of each cooled cruller into the strawberry glaze, allowing excess to drip off.
- Place glazed crullers on a cooling rack to set.
