Ingredients
  

For the Crullers
  • 1 cup water for dough
  • 1 stick unsalted butter cut into pieces
  • 1 cup all-purpose flour sifted
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 4 large eggs room temperature
  • 1 quart oil for frying
For the Strawberry Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk adjust for consistency
  • 1 cup fresh strawberries pureed
  • 1 teaspoon vanilla extract

Method
 

Make the Cruller Dough
  1. In a saucepan, combine water and butter. Bring to a boil over medium heat.
  2. Once boiling, remove from heat and stir in flour, sugar, and salt until a smooth dough forms.
  3. Allow the dough to cool slightly, then add eggs one at a time, mixing well after each addition.
Fry the Crullers
  1. Heat oil in a deep fryer to 350°F (175°C).
  2. Transfer the dough to a piping bag fitted with a large star tip.
  3. Pipe 4-inch rings onto parchment paper, then carefully drop them into the hot oil.
  4. Fry until golden brown, about 3-4 minutes per side. Remove and drain on a cooling rack.
Prepare the Strawberry Glaze
  1. In a bowl, whisk together powdered sugar, milk, pureed strawberries, and vanilla extract until smooth.
  2. Adjust the consistency with more milk if necessary.
Glaze the Crullers
  1. Dip the top of each cooled cruller into the strawberry glaze, allowing excess to drip off.
  2. Place glazed crullers on a cooling rack to set.
