Dry Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
Wet Ingredients
  • 1 cup buttermilk
  • 2 large eggs
  • 1 stick unsalted butter melted
  • 1 cup fresh corn kernels
  • 2 medium jalapeños finely chopped
Zesty Lime Drizzle
  • 1 cup powdered sugar
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest

Method
 

Prepare the Cornbread
  1. Preheat the oven to 400°F (200°C) and grease a baking dish.
  2. In a mixing bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, combine the buttermilk, eggs, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the corn kernels and chopped jalapeños.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 25 minutes or until golden brown and a toothpick comes out clean.
Make the Zesty Lime Drizzle
  1. In a small bowl, whisk together the powdered sugar, lime juice, and lime zest until smooth.
Serve
  1. Once the cornbread is done, let it cool slightly before drizzling with the lime mixture.
  2. Cut into squares and serve warm.

Notes
