Prepare the Cornbread
- Preheat the oven to 400°F (200°C) and grease a baking dish.
- In a mixing bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
- In another bowl, combine the buttermilk, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the corn kernels and chopped jalapeños.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 25 minutes or until golden brown and a toothpick comes out clean.
Make the Zesty Lime Drizzle
- In a small bowl, whisk together the powdered sugar, lime juice, and lime zest until smooth.
Serve
- Once the cornbread is done, let it cool slightly before drizzling with the lime mixture.
- Cut into squares and serve warm.
