Ingredients
  

Salad Base
  • 2 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup corn canned or fresh
  • 1 cup black beans rinsed and drained
  • 1 avocado sliced
Chicken
  • 2 cups grilled chicken breast chopped
Dressing
  • 1 cup Greek yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 clove garlic minced
  • 1 teaspoon salt
  • 1 teaspoon pepper

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt, pepper, cumin, and chili powder.
  2. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let it rest before chopping.
Make the Dressing
  1. In a mixing bowl, whisk together Greek yogurt, lime juice, cumin, chili powder, minced garlic, salt, and pepper until smooth.
Assemble the Salad
  1. In a large mixing bowl, combine chopped romaine lettuce, cherry tomatoes, cucumber, corn, black beans, and sliced avocado.
  2. Add the chopped grilled chicken on top and drizzle with the dressing. Toss gently to combine.
Serve
  1. Divide the salad into serving bowls and enjoy immediately.
