Ingredients
  

Salad Base
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup corn canned or fresh
  • 1 cup black beans rinsed and drained
  • 1 avocado diced
Chicken
  • 2 cups grilled chicken breast chopped
Dressing
  • 1 cup Greek yogurt plain
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 clove garlic minced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt, pepper, cumin, and chili powder.
  2. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let it rest before chopping.
Make the Dressing
  1. In a mixing bowl, whisk together Greek yogurt, lime juice, cumin, chili powder, minced garlic, salt, and black pepper until smooth.
Assemble the Salad
  1. In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, corn, black beans, avocado, and grilled chicken.
  2. Drizzle the dressing over the salad and toss gently to combine.
Serve
  1. Divide the salad into bowls and serve immediately.
