Ingredients
  

Cookies
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 large egg
  • 1 cup mashed ripe bananas about 2 bananas
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup vanilla wafers crushed
  • 1 cup chocolate chips optional

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add the egg and mashed bananas, mixing until well combined.
  4. In a separate bowl, whisk together the flour and baking soda.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Stir in the vanilla wafers and chocolate chips if using.
Bake the Cookies
  1. Using a cookie scoop, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  3. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to a week. For extra banana flavor, add a few slices of banana on top before baking.
