Prepare the Cookies
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the egg and mashed bananas, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool completely.
Prepare the Filling
- In a bowl, whisk together the vanilla pudding mix and milk until thickened.
- Once the cookies are cool, spread a layer of pudding on the bottom of one cookie and top with another cookie to create a sandwich.
- Top with whipped cream before serving.
