Ingredients
  

Cookies
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 large egg
  • 1 cup mashed ripe bananas about 2 bananas
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
Filling
  • 1 cup vanilla pudding mix instant
  • 2 cups milk
  • 1 cup whipped cream for topping

Method
 

Prepare the Cookies
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add the egg and mashed bananas, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool completely.
Prepare the Filling
  1. In a bowl, whisk together the vanilla pudding mix and milk until thickened.
  2. Once the cookies are cool, spread a layer of pudding on the bottom of one cookie and top with another cookie to create a sandwich.
  3. Top with whipped cream before serving.
