Ingredients
  

Potatoes
  • 4 medium Russet potatoes peeled and thinly sliced
Sauce
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese plus more for topping
  • 2 tablespoons butter for greasing the dish
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme dried

Method
 

Prepare the potatoes
  1. Preheat the oven to 350°F (175°C). Grease a baking dish with butter.
  2. In a large bowl, combine the sliced potatoes with salt, pepper, and thyme.
Make the sauce
  1. In a saucepan over medium heat, melt 2 tablespoons of butter and sauté the minced garlic until fragrant.
  2. Add the heavy cream and bring to a simmer. Stir in the cheddar cheese until melted and smooth.
Assemble and bake
  1. Layer half of the potatoes in the greased baking dish, then pour half of the cheese sauce over them.
  2. Repeat with the remaining potatoes and sauce. Top with additional cheese if desired.
  3. Cover with foil and bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until golden and bubbly.
Serve
  1. Let cool for a few minutes before serving. Enjoy your scalloped potatoes!

Notes
