Prepare the Cake
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine semolina, yogurt, sugar, milk, baking powder, ground mastic, melted butter, and vanilla extract. Mix until smooth.
- Pour the batter into a greased baking dish and smooth the top.
- Bake in the preheated oven for 30 minutes or until golden brown.
Make the Syrup
- In a saucepan, combine water and sugar. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add lemon juice and simmer for an additional 5 minutes. Remove from heat and let cool.
Combine and Serve
- Once the cake is baked, remove it from the oven and immediately pour the cooled syrup over the hot cake.
- Allow the cake to absorb the syrup for at least 30 minutes before serving.
