Ingredients
  

For the Roasted Strawberries
  • 2 cups fresh strawberries hulled and halved
  • 2 tablespoons granulated sugar adjust based on sweetness preference
  • 1 tablespoon balsamic vinegar optional for added depth
For the Whipped Ricotta
  • 1 cup ricotta cheese preferably whole milk
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 pinch salt
For Assembly
  • 4 slices bread your choice, such as sourdough or whole grain
  • 1 tablespoon olive oil for toasting
  • 1 tablespoon fresh mint chopped, for garnish

Method
 

Roast the Strawberries
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the strawberries with sugar and balsamic vinegar.
  3. Spread the strawberries on a baking sheet and roast for 15-20 minutes until soft and caramelized.
Prepare the Whipped Ricotta
  1. In a mixing bowl, combine ricotta cheese, honey, vanilla extract, and salt.
  2. Using a hand mixer, whip the mixture until smooth and creamy.
Toast the Bread
  1. Brush the bread slices with olive oil on both sides.
  2. Toast the bread in a toaster or on a skillet until golden brown.
Assemble the Toast
  1. Spread a generous layer of whipped ricotta on each slice of toasted bread.
  2. Top with roasted strawberries and garnish with chopped mint.
