Ingredients
  

For the Roasted Strawberries
  • 2 cups fresh strawberries hulled and halved
  • 2 tablespoons granulated sugar for sweetness
  • 1 tablespoon balsamic vinegar optional, for depth of flavor
For the Whipped Ricotta
  • 1 cup ricotta cheese whole milk or part-skim
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 pinch salt
For Assembly
  • 4 slices bread your choice, such as sourdough or whole grain
  • 1 tablespoon olive oil for toasting
  • 2 tablespoons fresh mint chopped, for garnish

Method
 

Roasting the Strawberries
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the strawberries, sugar, and balsamic vinegar. Toss to coat.
  3. Spread the strawberries on a baking sheet in a single layer.
  4. Roast in the oven for 15-20 minutes, until the strawberries are soft and caramelized.
Preparing the Whipped Ricotta
  1. In a mixing bowl, add the ricotta cheese, honey, vanilla extract, and salt.
  2. Using a hand mixer, whip the mixture until smooth and creamy.
Toasting the Bread
  1. Brush each slice of bread with olive oil on both sides.
  2. Toast the bread in a toaster or on a skillet until golden brown.
Assembling the Toast
  1. Spread a generous layer of whipped ricotta on each slice of toasted bread.
  2. Top with the roasted strawberries and garnish with chopped mint.
