Ingredients
  

Carrots
  • 1 pound carrots peeled and cut into sticks
Whipped Ricotta
  • 1 cup ricotta cheese fresh
  • 1 tablespoon olive oil for whipping
  • 1 pinch salt to taste
Hot Honey
  • 2 tablespoons honey preferably spicy
  • 1 teaspoon red pepper flakes
Garnish
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon zest

Method
 

Roasting Carrots
  1. Preheat the oven to 425°F (220°C).
  2. Toss the carrots with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the oven for 25-30 minutes, or until tender and caramelized.
Whipping Ricotta
  1. In a mixing bowl, combine ricotta cheese, olive oil, and salt.
  2. Use a food processor to whip until smooth and creamy.
Assembling the Dish
  1. Spread the whipped ricotta on a serving platter.
  2. Top with the roasted carrots.
  3. Drizzle with hot honey and garnish with parsley and lemon zest.
