Ingredients
  

For the Roasted Carrots
  • 1 pound Carrots peeled and cut into sticks
  • 2 tablespoons Olive Oil for roasting
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
For the Whipped Ricotta
  • 1 cup Ricotta Cheese whole milk
  • 1 tablespoon Olive Oil for creaminess
  • 1 teaspoon Lemon Juice freshly squeezed
  • 1 pinch Salt to taste
For the Hot Honey
  • 1 cup Honey preferably raw
  • 1 teaspoon Red Pepper Flakes adjust to taste

Method
 

Roasting the Carrots
  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss the carrot sticks with olive oil, salt, and black pepper.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
Preparing the Whipped Ricotta
  1. In a food processor, combine the ricotta cheese, olive oil, lemon juice, and salt.
  2. Blend until smooth and creamy, scraping down the sides as needed.
Making the Hot Honey
  1. In a small saucepan over low heat, combine honey and red pepper flakes.
  2. Stir gently until warmed through, then remove from heat.
Assembling the Dish
  1. On a serving platter, arrange the roasted carrots.
  2. Dollop the whipped ricotta over the carrots.
  3. Drizzle the hot honey over the top before serving.
