Ingredients
  

Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 tablespoons curry powder adjust to taste
  • 1 can coconut milk 13.5 oz
  • 4 cups vegetable broth or chicken broth
  • 2 cups mixed vegetables carrots, bell peppers, etc.
  • 1 tablespoon soy sauce for seasoning
  • 1 teaspoon lime juice freshly squeezed
Dumplings
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup milk or plant-based milk
  • 2 tablespoons fresh herbs chopped parsley or cilantro

Method
 

Prepare the Soup
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic, grated ginger, and curry powder. Cook for an additional 1-2 minutes until fragrant.
  3. Pour in the coconut milk and vegetable broth. Bring to a simmer.
  4. Add mixed vegetables and soy sauce. Simmer for 10 minutes until vegetables are tender.
Make the Dumplings
  1. In a mixing bowl, combine flour, baking powder, and salt. Stir in milk until a dough forms.
  2. Fold in chopped herbs. Drop spoonfuls of the dumpling mixture into the simmering soup.
  3. Cover the pot and cook for an additional 10 minutes until dumplings are cooked through.
Serve
  1. Stir in lime juice before serving. Ladle soup into bowls and enjoy!
