  • 1 cup canned pumpkin puree unsweetened
  • 4 oz feta cheese crumbled
  • 2 tbsp cream cheese softened
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tsp dried thyme
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tbsp lemon juice freshly squeezed
Serving Suggestions
  • 1 bag crackers for dipping
  • 1 cup vegetable sticks carrots, celery, etc.

Method
 

Prepare the Dip
  1. In a food processor, combine the pumpkin puree, feta cheese, cream cheese, olive oil, minced garlic, dried thyme, salt, black pepper, and lemon juice.
  2. Blend until smooth and creamy, scraping down the sides as needed.
Serve
  1. Transfer the dip to a mixing bowl and serve with crackers and vegetable sticks.
