Ingredients
  

Dip Base
  • 1 cup canned pumpkin puree Not pumpkin pie filling
  • 8 oz feta cheese Crumbled
  • 2 tbsp cream cheese Softened
  • 2 tbsp olive oil Extra virgin
  • 1 clove garlic Minced
  • 1 tsp lemon juice Freshly squeezed
  • 1 tsp dried thyme
  • 1 tsp salt To taste
  • 1 tsp black pepper Freshly ground
Garnish
  • 1 tbsp pumpkin seeds Toasted
  • 1 tbsp fresh parsley Chopped

Method
 

Prepare the Dip
  1. In a food processor, combine the pumpkin puree, feta cheese, cream cheese, olive oil, minced garlic, lemon juice, dried thyme, salt, and black pepper.
  2. Blend until smooth and creamy, scraping down the sides as needed.
Serve
  1. Transfer the whipped feta dip to a mixing bowl.
  2. Garnish with toasted pumpkin seeds and chopped parsley.
  3. Serve with crackers, pita chips, or fresh vegetables.
