Method
Prepare the Cookie Base
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the creamed mixture until just blended.
Assemble the Bars
- Spread half of the cookie dough into the bottom of the prepared baking dish.
- Spread the fruit preserves evenly over the dough.
- Drop spoonfuls of the remaining cookie dough over the preserves, spreading gently to cover.
- Bake for 25-30 minutes or until golden brown. Allow to cool completely.
Make the Glaze
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the glaze over the cooled cookie bars and sprinkle with optional sprinkles.
