Delicious cookie bars filled with your favorite pop tart flavors, topped with a sweet glaze.

Ingredients
  

For the Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
For the Filling
  • 1 cup fruit preserves your choice of flavor
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon sprinkles optional

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the creamed mixture until just blended.
Assemble the Bars
  1. Spread half of the cookie dough into the bottom of the prepared baking dish.
  2. Spread the fruit preserves evenly over the dough.
  3. Drop spoonfuls of the remaining cookie dough over the preserves, spreading gently to cover.
  4. Bake for 25-30 minutes or until golden brown. Allow to cool completely.
Make the Glaze
  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the cooled cookie bars and sprinkle with optional sprinkles.
