Ingredients
  

Mocktail Base
  • 2 cups fresh pineapple juice preferably chilled
  • 1 cup coconut water unsweetened
  • 1 cup fresh mint leaves plus extra for garnish
  • 2 tablespoons lime juice freshly squeezed
  • 2 tablespoons agave syrup or honey, to taste
  • 1 liter sparkling water chilled
  • 1 cup ice cubes

Method
 

Prepare the Mojito
  1. In a pitcher, combine the fresh pineapple juice, coconut water, lime juice, and agave syrup. Stir well to combine.
  2. Add the fresh mint leaves to the mixture and gently muddle them with a muddler to release their flavor.
  3. Fill glasses with ice cubes and pour the pineapple coconut mixture over the ice.
  4. Top each glass with chilled sparkling water and stir gently to combine.
  5. Garnish with extra mint leaves and serve immediately.
