Ingredients
  

Mojito Base
  • 1 cup fresh pineapple juice preferably chilled
  • 1 cup coconut water unsweetened
  • 1 cup sparkling water or club soda
  • 1 tablespoon fresh lime juice about 1 lime
  • 10 leaves fresh mint leaves plus extra for garnish
  • 2 tablespoons honey or agave syrup to taste

Method
 

Prepare the Mojito
  1. In a pitcher, combine the fresh pineapple juice, coconut water, and lime juice.
  2. Add the mint leaves and honey or agave syrup. Use a muddler to gently crush the mint leaves to release their oils.
  3. Stir the mixture well to combine all the ingredients.
  4. Pour the mixture into glasses filled with ice, then top with sparkling water.
  5. Garnish with additional mint leaves and a slice of pineapple if desired.

Notes
