Salad Base
  • 4 cups Mixed greens Romaine, spinach, and arugula
  • 1 cup Cherry tomatoes Halved
  • 1 cucumber Cucumber Sliced
  • 1 avocado Avocado Diced
Dressings
  • 3 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey Optional
  • 1 pinch Salt
  • 1 pinch Black pepper
Toppings
  • 1 cup Feta cheese Crumbled
  • 1 4 Radishes Sliced
  • 1 4 Green onions Chopped
  • 1 handful Fresh herbs Basil or parsley

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, and avocado.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Top the salad with feta cheese, radishes, green onions, and fresh herbs.
  5. Serve immediately on a serving platter.
