  • 1 pound chicken livers cleaned and trimmed
  • 2 medium onions finely chopped
  • 4 tablespoons unsalted butter divided
  • 2 hard boiled eggs peeled
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Cooking the Chicken Livers
  1. In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onions and sauté until they are soft and translucent, about 5-7 minutes.
  2. Add the cleaned chicken livers to the skillet and cook for about 10-12 minutes, stirring occasionally, until they are browned and cooked through.
  3. Remove from heat and let cool slightly.
Blending the Mixture
  1. In a food processor, combine the cooked chicken livers and onions, hard boiled eggs, salt, and pepper. Pulse until the mixture is smooth and creamy.
  2. If the mixture is too thick, add a little more butter to achieve the desired consistency.
Serving
  1. Transfer the chopped liver mixture to a serving dish. Garnish with chopped parsley and serve with crackers or bread.
