Ingredients
  

Protein
  • 1 pound chicken breast sliced into thin strips
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup zucchini sliced
  • 1 cup red onion sliced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
Sauce
  • 3 tablespoons olive oil for cooking
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic minced
  • 1 teaspoon oregano dried
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Chicken
  1. Heat 1 tablespoon of olive oil in a wok over medium-high heat. Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
Cook the Vegetables
  1. Add the remaining olive oil to the wok. Add the bell pepper, zucchini, and red onion. Stir-fry for about 5 minutes until they start to soften.
  2. Add the cherry tomatoes and spinach, and stir-fry for another 2-3 minutes until the spinach wilts.
Combine and Serve
  1. Return the cooked chicken to the wok. Add balsamic vinegar, garlic, oregano, salt, and pepper. Stir well to combine and cook for an additional 2 minutes.
  2. Serve hot, garnished with fresh herbs if desired.
