Ingredients
  

Protein
  • 1 lb Chicken breast boneless, skinless, cut into strips
Vegetables
  • 1 cup Bell peppers sliced (red, yellow, green)
  • 1 cup Zucchini sliced
  • 1 cup Red onion sliced
  • 1 cup Cherry tomatoes halved
Sauce
  • 3 tbsp Olive oil for cooking
  • 2 tbsp Balsamic vinegar
  • 1 tbsp Garlic minced
  • 1 tbsp Oregano dried
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
Garnish
  • 1 tbsp Fresh parsley chopped
  • 1 tbsp Feta cheese crumbled

Method
 

Prepare the Ingredients
  1. Slice the chicken breast into strips and season with salt and pepper.
  2. Chop the bell peppers, zucchini, red onion, and halve the cherry tomatoes.
Cook the Chicken
  1. Heat 1 tablespoon of olive oil in a wok over medium-high heat.
  2. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes.
Stir Fry the Vegetables
  1. Add the remaining olive oil to the wok and toss in the bell peppers, zucchini, and red onion.
  2. Stir fry for about 5 minutes until the vegetables are tender-crisp.
  3. Add the cherry tomatoes, garlic, oregano, and balsamic vinegar, and cook for an additional 2 minutes.
Combine and Serve
  1. Return the cooked chicken to the wok and mix everything together.
  2. Serve hot, garnished with fresh parsley and crumbled feta cheese.
