Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon lemon zest fresh
For Topping
  • 1 cup powdered sugar for dusting

Method
 

Prepare the Dough
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, lemon juice, and lemon zest to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cookies
  1. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  3. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
  4. Once cooled, dust the cookies with powdered sugar before serving.
