Method
Prepare the Soufra
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, vanilla extract, and lemon zest. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Prepare the Topping
- In a small bowl, mix the whipped cream with lemon juice.
- Once the soufra is baked and cooled slightly, serve with the lemon whipped cream and dust with powdered sugar.
