Ingredients
  

For the Soufra
  • 1 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 1 cup Milk Whole or 2%
  • 1 large Egg
  • 1 tsp Vanilla extract
  • 2 tbsp Lemon zest Freshly grated
  • 1 cup Fresh blueberries Can substitute with frozen
For the Topping
  • 1 cup Whipped cream For serving
  • 1 tbsp Lemon juice Freshly squeezed
  • 1 tbsp Powdered sugar For dusting

Method
 

Prepare the Soufra
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, egg, vanilla extract, and lemon zest. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Prepare the Topping
  1. In a small bowl, mix the whipped cream with lemon juice.
  2. Once the soufra is baked and cooled slightly, serve with the lemon whipped cream and dust with powdered sugar.

Notes
