Ingredients
  

For the Chicken Salad
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1/2 cup mayonnaise Adjust to taste.
  • 1 tablespoon dried culinary lavender Ensure it's food-grade.
  • 1 stalk celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon lemon juice Freshly squeezed.
For Assembly
  • 8 slices whole grain bread Or your preferred sandwich bread.
  • 4 leaves romaine lettuce For garnish.
  • 1 medium tomato, sliced Optional.

Method
 

Prepare the Chicken Salad
  1. In a mixing bowl, combine the shredded chicken, mayonnaise, dried lavender, chopped celery, chopped red onion, and lemon juice.
  2. Mix well until all ingredients are evenly coated. Season with salt and pepper to taste.
Assemble the Sandwiches
  1. Lay out the slices of bread on a clean surface.
  2. Spread a generous amount of the chicken salad mixture on four slices of bread.
  3. Top with a lettuce leaf and tomato slices if using, then place the remaining slices of bread on top to form sandwiches.
  4. Cut the sandwiches in half and serve immediately or wrap for later.
