Method
Prepare the Chicken Salad
- In a mixing bowl, combine the shredded chicken, Greek yogurt, dried lavender, diced celery, halved grapes, honey, lemon juice, salt, and black pepper. Mix well until all ingredients are evenly coated.
Assemble the Sandwiches
- Lay out the slices of whole grain bread. On four slices, place a leaf of romaine lettuce, followed by a generous scoop of the lavender chicken salad. If desired, add sliced cucumber on top.
- Top with the remaining slices of bread to complete the sandwiches. Cut in half and serve immediately.
