Prepare Chicken Salad
- In a mixing bowl, combine shredded chicken, Greek yogurt, dried lavender, honey, diced celery, halved grapes, lemon juice, salt, and pepper. Mix well until all ingredients are evenly coated.
- Taste and adjust seasoning if necessary, adding more honey or salt as desired.
Assemble Sandwiches
- Lay out 4 slices of whole grain bread on a clean surface.
- Spread a generous amount of the lavender chicken salad on each slice.
- Top with a romaine lettuce leaf and cover with another slice of bread.
- Cut the sandwiches in half and serve on a platter.
