Ingredients
  

Lamb Leg
  • 1 whole leg of lamb about 4-5 pounds
Marinade
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 lemon juice
Vegetables
  • 4 carrots carrots cut into chunks
  • 2 cups potatoes cut into chunks
  • 1 cup onion quartered

Method
 

Prepare the Marinade
  1. In a bowl, combine minced garlic, chopped rosemary, olive oil, salt, pepper, and lemon juice to create the marinade.
Marinate the Lamb
  1. Rub the marinade all over the leg of lamb, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Preheat the Oven
  1. Preheat your oven to 350°F (175°C).
Prepare the Vegetables
  1. In a roasting pan, place the carrots, potatoes, and onion. Drizzle with olive oil and season with salt and pepper.
Roast the Lamb
  1. Place the marinated lamb leg on top of the vegetables in the roasting pan. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
Rest and Serve
  1. Remove the lamb from the oven and let it rest for 15 minutes before slicing. Serve with the roasted vegetables.

Notes
