  • 1 cup almond flour preferably blanched
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 1 stick unsalted butter melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 medium ripe pears peeled and diced

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, whisk together the almond flour, all-purpose flour, sugar, baking powder, and salt.
  3. In another bowl, combine the melted butter, eggs, and vanilla extract. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the diced pears gently into the batter.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
