Ingredients
  

Vegetables
  • 2 cups fresh spinach chopped
  • 1 small onion diced
  • 1 clove garlic minced
Dairy
  • 1 cup cottage cheese preferably low-fat
  • 4 large eggs
  • 1 cup milk can use almond or soy milk
  • 1 cup shredded cheese such as cheddar or mozzarella
Seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano

Method
 

Prepare the Vegetables
  1. Preheat the oven to 350°F (175°C). In a skillet over medium heat, sauté the diced onion and minced garlic until translucent, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
Mix the Quiche Filling
  1. In a mixing bowl, whisk together the cottage cheese, eggs, and milk until smooth. Stir in the sautéed vegetables, shredded cheese, salt, pepper, and oregano until well combined.
Bake the Quiche
  1. Pour the mixture into a greased 9-inch pie dish. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
Serve
  1. Allow the quiche to cool for a few minutes before slicing. Serve warm or at room temperature.
