Method
Prepare the Vegetables
- Preheat the oven to 350°F (175°C). In a skillet over medium heat, sauté the diced onion and minced garlic until translucent, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
Mix the Quiche Filling
- In a mixing bowl, whisk together the cottage cheese, eggs, and milk until smooth. Stir in the sautéed vegetables, shredded cheese, salt, pepper, and oregano until well combined.
Bake the Quiche
- Pour the mixture into a greased 9-inch pie dish. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
Serve
- Allow the quiche to cool for a few minutes before slicing. Serve warm or at room temperature.
