Method
Prepare the filling
- In a mixing bowl, combine the diced ham, grated cheddar cheese, and mustard if using. Mix well.
Assemble the pastries
- Preheat the oven to 200°C (400°F). Roll out the puff pastry on a lightly floured surface and cut into squares.
- Place a spoonful of the ham and cheese mixture in the center of each square. Fold the pastry over to form triangles and seal the edges with a fork.
- Brush the tops of the pastries with the beaten egg.
Bake
- Place the pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown.
Serve
- Remove from the oven and let cool slightly before serving. Enjoy warm.

These pastries can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
