Ingredients
  

Chicken and Pasta
  • 2 cups Pasta (penne or rotini) uncooked
  • 2 medium Chicken breasts boneless and skinless
  • 1 tablespoon Olive oil for grilling chicken
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
Bruschetta Topping
  • 2 cups Cherry tomatoes halved
  • 1 cup Fresh basil chopped
  • 2 cloves Garlic minced
  • 2 tablespoons Balsamic glaze for drizzling
  • 1 teaspoon Olive oil for mixing

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Rub the chicken breasts with olive oil, salt, and pepper. Grill for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest for a few minutes before slicing.
Prepare the Bruschetta Topping
  1. In a medium bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, and olive oil. Mix well and season with salt and pepper to taste.
Combine and Serve
  1. In a large skillet, combine the cooked pasta, sliced grilled chicken, and bruschetta topping. Toss gently to combine. Drizzle with balsamic glaze before serving.
