How to Cook Perfect Bruschetta Chicken Pasta

Ingredients
  

For the Chicken
  • 2 pieces chicken breasts boneless and skinless
  • 1 teaspoon olive oil for grilling
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Pasta
  • 12 ounces penne pasta or any pasta of choice
  • 2 cups chicken broth for cooking pasta
For the Bruschetta Topping
  • 2 cups cherry tomatoes halved
  • 1 cup fresh basil chopped
  • 2 cloves garlic minced
  • 1 tablespoon balsamic glaze for drizzling
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, Italian seasoning, salt, and pepper.
  2. Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest.
Cook the Pasta
  1. In a large pot, bring chicken broth to a boil. Add the penne pasta and cook according to package instructions until al dente.
  2. Drain the pasta and set aside, reserving a little broth for later.
Make the Bruschetta Topping
  1. In a bowl, combine cherry tomatoes, basil, garlic, salt, and pepper. Mix well.
  2. Chop the grilled chicken into bite-sized pieces and add to the tomato mixture.
Combine and Serve
  1. In a large pan, combine the cooked pasta with the chicken and bruschetta mixture. If needed, add a splash of reserved chicken broth to moisten.
  2. Serve hot, drizzled with balsamic glaze.
