Ingredients
  

Chicken
  • 2 pieces Chicken Breasts Boneless and skinless
Pasta
  • 12 ounces Penne Pasta Or any pasta of your choice
Bruschetta Topping
  • 2 cups Cherry Tomatoes Diced
  • 1 cup Fresh Basil Chopped
  • 2 cloves Garlic Minced
  • 2 tablespoons Olive Oil Extra virgin
  • 1 tablespoon Balsamic Glaze For drizzling
Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper.
  2. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let rest.
Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente.
  2. Drain the pasta and set aside, reserving a little pasta water.
Make the Bruschetta Topping
  1. In a mixing bowl, combine the diced cherry tomatoes, chopped basil, minced garlic, and olive oil. Mix well.
Combine and Serve
  1. Slice the grilled chicken into strips. In a large pan, combine the cooked pasta and bruschetta topping. Toss gently to combine.
  2. Serve the pasta topped with sliced chicken and a drizzle of balsamic glaze.
