Ingredients
  

Pasta
  • 12 oz Penne pasta or any pasta of choice
Chicken
  • 2 large Chicken breasts boneless and skinless
Bruschetta Topping
  • 2 cups Cherry tomatoes halved
  • 1 cup Fresh basil chopped
  • 2 cloves Garlic minced
  • 3 tbsp Olive oil extra virgin
  • 1 tsp Balsamic vinegar
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
Cheese
  • 1 cup Parmesan cheese grated

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Grill Chicken
  1. While the pasta is cooking, heat a grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes on each side or until fully cooked. Remove from heat and let rest before slicing.
Prepare Bruschetta Topping
  1. In a mixing bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Mix well and set aside.
Combine and Serve
  1. In a large bowl, combine the cooked pasta, sliced grilled chicken, and bruschetta topping. Toss gently to combine. Serve warm, topped with grated Parmesan cheese.
