Hot Cross Buns

Soft, spiced sweet buns studded with currants and marked with a cross, traditionally eaten on Good Friday.

Ingredients
  

Dough
  • 500 g strong white bread flour
  • 75 g caster sugar
  • 10 g salt
  • 10 g instant yeast
  • 250 ml whole milk warm
  • 50 g unsalted butter melted
  • 1 large egg
  • 100 g currants
  • 1 tsp mixed spice powder
Cross and Glaze
  • 75 g plain flour
  • 100 ml water for cross
  • 75 g apricot jam for glaze

Method
 

Prepare the Dough
  1. In a mixing bowl, combine the flour, sugar, salt, and yeast. Make a well in the center and add the warm milk, melted butter, and egg. Mix until a dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  3. Place the dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
Shape the Buns
  1. Once risen, punch down the dough and knead in the currants and mixed spice powder.
  2. Divide the dough into 12 equal pieces and shape each piece into a bun. Place on a baking sheet lined with parchment paper.
  3. Cover the buns with a kitchen towel and let them rise for another 30 minutes.
Bake the Buns
  1. Preheat the oven to 220°C (428°F).
  2. Mix the plain flour with enough water to make a thick paste. Pipe a cross on each bun.
  3. Bake for 20 minutes or until golden brown. Remove from the oven and brush with warm apricot jam for glaze.

Notes

Hot Cross Buns are best served warm and can be toasted for extra flavor.
