Ingredients
  

Dough
  • 4 cups all-purpose flour
  • 1 cup milk warm
  • 1 cup sugar divided
  • 1 packet active dry yeast
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon mixed spice
  • 2 tablespoons butter melted
  • 2 large eggs beaten
  • 1 cup currants
  • 1 cup raisins
Cross and Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk for glaze
  • 1 tablespoon flour for cross
  • 2 tablespoons water for cross

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm milk, 1 tablespoon of sugar, and yeast. Let it sit for 10 minutes until frothy.
  2. In a large bowl, mix flour, remaining sugar, salt, cinnamon, nutmeg, and mixed spice.
  3. Make a well in the center and add melted butter, beaten eggs, and the yeast mixture. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth.
  5. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
Shape and Bake
  1. After rising, punch down the dough and knead in currants and raisins.
  2. Divide the dough into 12 equal pieces and shape into buns. Place on a baking sheet lined with parchment paper.
  3. Cover and let rise for another 30 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. For the cross, mix flour and water to form a paste. Pipe crosses on each bun.
  6. Bake for 20 minutes or until golden brown.
Glaze
  1. Mix powdered sugar and milk to create a glaze. Brush over warm buns after baking.
