Method
Prepare the Dough
- In a mixing bowl, combine warm milk, 1 tablespoon of sugar, and yeast. Let it sit for 10 minutes until frothy.
- In a large bowl, mix flour, remaining sugar, salt, cinnamon, nutmeg, and mixed spice.
- Make a well in the center and add melted butter, beaten eggs, and the yeast mixture. Mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth.
- Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
Shape and Bake
- After rising, punch down the dough and knead in currants and raisins.
- Divide the dough into 12 equal pieces and shape into buns. Place on a baking sheet lined with parchment paper.
- Cover and let rise for another 30 minutes.
- Preheat the oven to 375°F (190°C).
- For the cross, mix flour and water to form a paste. Pipe crosses on each bun.
- Bake for 20 minutes or until golden brown.
Glaze
- Mix powdered sugar and milk to create a glaze. Brush over warm buns after baking.
