Carrots
  • 1 pound carrots peeled and cut into sticks
Honey Mixture
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine honey, olive oil, salt, pepper, and thyme.
  3. Add the carrot sticks to the bowl and toss until well coated.
Roasting
  1. Spread the coated carrots in a single layer on a baking sheet.
  2. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
  3. Remove from oven and let cool slightly before serving.
