Prepare the Potatoes
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the heavy cream, whole milk, minced garlic, salt, black pepper, and thyme.
- Layer half of the sliced potatoes in a greased baking dish.
- Pour half of the cream mixture over the potatoes and sprinkle with half of the Gruyere cheese.
- Repeat with the remaining potatoes, cream mixture, and cheese.
Bake the Dish
- Cover the baking dish with aluminum foil and bake for 45 minutes.
- Remove the foil, mix the panko breadcrumbs with melted butter, and sprinkle on top.
- Bake uncovered for an additional 15 minutes, or until the top is golden brown and bubbly.
- Let it cool for a few minutes before serving.
