Prepare the Marinade
- In a bowl, combine minced garlic, olive oil, chopped rosemary, chopped oregano, lemon juice, salt, and black pepper to create the marinade.
Marinate the Lamb
- Rub the marinade all over the leg of lamb, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare for Roasting
- Preheat the oven to 180°C (350°F). Place the marinated lamb in a roasting pan.
- Arrange the potato wedges, carrot chunks, and onion wedges around the lamb in the roasting pan.
Roast the Lamb
- Roast in the preheated oven for about 2 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare.
- Baste the lamb with the pan juices every 30 minutes for extra flavor.
Rest and Serve
- Once cooked, remove the lamb from the oven and let it rest for 15 minutes before carving.
