Ingredients
  

Lamb
  • 1 kg leg of lamb bone-in, trimmed
Marinade
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh oregano chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Vegetables
  • 4 medium potatoes peeled and cut into wedges
  • 2 medium carrots peeled and cut into chunks
  • 1 medium onion cut into wedges

Method
 

Prepare the Marinade
  1. In a bowl, combine minced garlic, olive oil, chopped rosemary, chopped oregano, lemon juice, salt, and black pepper to create the marinade.
Marinate the Lamb
  1. Rub the marinade all over the leg of lamb, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare for Roasting
  1. Preheat the oven to 180°C (350°F). Place the marinated lamb in a roasting pan.
  2. Arrange the potato wedges, carrot chunks, and onion wedges around the lamb in the roasting pan.
Roast the Lamb
  1. Roast in the preheated oven for about 2 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare.
  2. Baste the lamb with the pan juices every 30 minutes for extra flavor.
Rest and Serve
  1. Once cooked, remove the lamb from the oven and let it rest for 15 minutes before carving.
  2. Serve with the roasted vegetables and enjoy your Greek-style roasted lamb!

Notes
