Ingredients
  

Cake Ingredients
  • 200 g ground almonds
  • 150 g granulated sugar
  • 4 large eggs room temperature
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest
  • 1 pinch salt
Syrup Ingredients
  • 200 g granulated sugar
  • 200 ml water
  • 1 tablespoon lemon juice
  • 1 teaspoon orange blossom water optional

Method
 

Prepare the Cake
  1. Preheat the oven to 180°C (350°F). Grease and flour a baking pan.
  2. In a mixing bowl, whisk together the ground almonds, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs, then add the vanilla extract and orange zest. Mix well.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 35-40 minutes or until a toothpick comes out clean.
Prepare the Syrup
  1. While the cake is baking, prepare the syrup. In a saucepan, combine sugar and water. Bring to a boil.
  2. Once boiling, reduce heat and let it simmer for about 10 minutes.
  3. Remove from heat and stir in lemon juice and orange blossom water if using. Let cool.
Finish the Cake
  1. Once the cake is done, remove it from the oven and let it cool for about 10 minutes.
  2. Poke holes all over the top of the cake with a toothpick.
  3. Pour the cooled syrup over the warm cake, allowing it to soak in.
  4. Let the cake cool completely before serving.
