Method
Prepare the Cake
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a mixing bowl, whisk together the ground almonds, sugar, baking powder, and salt.
- In another bowl, beat the eggs, then add the vanilla extract and orange zest. Mix well.
- Combine the wet ingredients with the dry ingredients and mix until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean.
Prepare the Syrup
- While the cake is baking, prepare the syrup. In a saucepan, combine water and sugar. Bring to a boil over medium heat.
- Once boiling, reduce heat and simmer for about 10 minutes. Add lemon juice and orange blossom water, then remove from heat.
Finish the Cake
- Once the cake is done, remove it from the oven and let it cool for 10 minutes.
- Carefully invert the cake onto a serving plate. Pour the warm syrup over the cake while it's still warm.
- Allow the cake to absorb the syrup for at least 30 minutes before serving.
